The name of the Belev pastille comes from the eponymous Russian city of Belev in the Tula region. At the end of the 19th century the merchant Amvrosy Prokhorov came up with a recipe for an original airy apple dessert.
The sweet quickly gained popularity in Russia and Europe and those who tried it for the first time noted its unusual taste and unique consistency.
